The 2026 trends with real evidence
| Trend | What it is | Bakery fit |
|---|---|---|
| Dot cakes / dot cups | Cake in a cup, thick frosting, sealed with nonpareils | Easy to copy; colourful single serves |
| Butter mochi / butter tteok | Glutinous rice flour, butter, eggs; crisp edge, chewy middle | Gluten-free flour base; check cross-contact |
| Japanese yogurt cheesecake | Biscuits pressed into thick yogurt and chilled | Simple, but easy for customers to make at home |
| Dubai chewy cookie (dujjonku) | Pistachio cream and kataifi in marshmallow, cocoa dusted | Expensive inputs; price carefully |
| Fruit-shaped mousse cakes | Entremets sculpted to look like real fruit | Skilled and premium; small batches |
How to judge a trend before you bake it
- Can you make it consistently at volume? Viral items often look easier than they are.
- What does it cost? Pistachio cream and kataifi are not cheap. Run it through the recipe cost calculator.
- Will it travel and hold? Mousse and yogurt items need chilling.
- Is it a week or a season? Trend coverage itself notes that Korean snack crazes can rise and fade quickly.
A two-week test plan
- ☐ Day 1: cost and photograph the item
- ☐ Days 2–3: small capped batch, post on social
- ☐ Days 4–14: same quantity daily; record sold, unsold and rejects
- ☐ Day 14: keep it if sell-through is strong and margin hits target
- ☐ Retire it quietly if not
Measure, don’t guess
In POS Bakery, add the trend item to the catalog with a photo, plan a capped quantity, and record good and rejected units at quality check. Menu insights and sales reporting show whether it actually sells. See bakery KPIs and menu insights and analytics.
