Bakery Intelligence Software: KPIs, Waste and Production Performance
A bakery management dashboard should connect what you planned, what your team baked, what customers ordered and what remains unsold.
Designed around the way a bakery really works
Understand production sell-through, batch yield, active labor productivity, custom cake deadlines and the limits of cost reporting.
Production plan versus actual
Compare planned batches with completed good units, recorded rejects, sales and current inventory. Stock snapshots alone do not establish historical sell-through.
On-time production and custom cakes
Use explicit scheduled deadlines and completed timestamps. Separate stock production from confirmed customer pickup commitments.
Labor and recipe costing
Record hands-on production time separately from passive proofing and cooling. Compare actual production costs with versioned recipe estimates.
KPI targets and reporting windows
Set manager-defined performance thresholds and compare 7-, 30- and 90-day periods with equivalent previous periods.
Forecast accuracy, bias and recommendation decisions
The v1.8.1 prototype reports a sales-proxy forecast error and bias from available historical recommendation outcomes, alongside approvals and other review decisions. Stockouts can hide lost demand, so this is not a verified true-demand accuracy score.
Safe intelligence controls
Optional intelligence supports shadow calculation and manager-reviewed advisory mode. It is disabled by default. Managers may approve or dismiss suggestions; approved bake quantities create queued plans rather than immediate production.
Know what cannot yet be measured
The prototype does not yet provide fully reconciled gross margin, a monetary waste ledger or defensible historical sell-through. These metrics must remain unavailable until source records are complete.

Frequently asked questions
Which bakery KPIs should I start with?
Start with production on-time rate, recorded rejects, active labor productivity, order fulfillment and custom cake readiness. Add sell-through and margin only when historical inventory and matched costs are reliable.
Does POS Bakery guarantee less waste or higher profits?
No. Performance depends on the bakery and data quality. POS Bakery is a development prototype and has no verified customer outcome statistics.
Does POS Bakery Intelligence need an LLM or AI API?
No. The development prototype uses lightweight statistical estimates, recipe math and eligibility checks in its existing backend. Forecasts and recommendations are advisory and must be interpreted against real bakery conditions.
